Pedro Ximénez – Made from majority Pedro Ximénez grapes, it is the sweetest wine in the Sherry spectrum. Dark in colour, it exhibits flavours of chocolate, dates, toffee, spice and coffee.
Oloroso – Meaning ‘aromatic’, this wine is aged without yeast. Heavier and meatier in style, you may find notes of walnuts, balsamic, dried fruits and tobacco.
Manzanilla – A Fino Sherry made only in Sanlúcar de Barrameda. Its coastal location and presence of yeast in maturation mean it is salty and dry. It has a floral freshness, and the name translates in Spanish to ‘Chamomile’.
Fino – Fino Sherry can be made anywhere in the Jerez region. Made traditionally from Palomino grapes, it translates to ‘Fine’ or ‘Sophisticated’, the wine has a crisp, fresh finesse with a little more bite.
Amontillado – Where dry and sweet sherries overlap! Aged both biologically under yeast and oxidatively without yeast. Can be described as a combination of Fino and Oloroso styles. Gingerbread in colour, it carries nutty, umami flavours.

Palate
Tangerines, cola syrup, cinnamon, dates, soft leather
Finish
Salty throughout, cayenne pepper, maraschino cherries, black banana, ginger loaf and pink pepper
